Collaborative Science: The Story Behind Suava Ale Yeast

Our latest collaboration brings that mission to life: Suava Ale Yeast (WLP079), a joint project between Escarpment Labs and White Labs.

Suava is a non-GMO, POF-negative strain that eliminates harsh phenolic or clove-like off-flavours while delivering a stable, pillowy haze and soft, full mouthfeel with low bitterness. An ideal fit for that new Hazy IPA, Double IPA, or Pale Ale that you've been wanting to add to the taplist. 

To share the science behind the strain, our Co-Founder and CEO, Richard Preiss, teamed up with White Labs to write an in-depth breakdown of Suava's genetic journey and trial data. Originating from the traditional European farmhouse strains, Suava was specifically selected and developed to meet the growing request for reliable, highly biotransformative dry yeasts.

Major Highlights from Richard's Origins of Suava Ale Yeast Deep Dive:

  • Genetics & Thiol Release: Genomic sequencing revealed how Suava produces its intense tropical aromatics. Equipped with optimized enzymatic activity, it efficiently unlocks bound thiol precursors from both malt and hops.

  • Fermentation Kenetics: Expect rapid attenutation (75-85%), medium-high flocculation and clean ester production when fermented between 18-22ºC (64-72ºF).

  • Commercial Application: By maximizing bound hop compounds, Suava helps commercial brewers and homebrewers (coming soon!) achieve bold, fruit-forward profiles while improving hop usage.
