Why You Should Love (And Brew) Pumpkin Ales: A Commercial Brewer's Deep Dive
I get it! I've done the eye-roll. I have made faces of boredom and disgust.
Not because I disliked the beer; I've made it, won awards with it, and genuinely love drinking it. But sometime around 2014, loving pumpkin ale started to feel like an admission of something… basic. The Ugg boots. The North Face jacket. The Starbucks cup. Pumpkin spice has become a cultural shorthand for 'no taste, no opinions’..' I personally embraced the title (though I don't own a pair of Uggs) and understood the backlash as simply people becoming oversaturated, overwhelmed and, frankly, bored of the flavour.
But did this mired flavour and social ridicule transfer to sales? Let's look at the numbers.
For coffee, by 2025, the Starbucks Pumpkin Spice Latte (PSL) alone was generating approximately $500 million in annual revenue, and September 2025 delivered a record-breaking fall sales week at U.S. stores. Not the highest in recent years, but a new record. The research agrees: a 2022 Montclair State University study, designed specifically to find backlash sentiment, concluded that 'very few openly hate' pumpkin spice. On social media, the sentiment was overwhelmingly positive. It found essentially no evidence that the backlash ever reflected actual consumer behaviour.
“Everyone hated it” …but nobody stopped buying it.
The gap between what drinkers say they want and what they actually buy is the most fascinating thing about pumpkin spice. It has a lot to teach us about brewing for real consumer psychology rather than craft beer orthodoxy.
So here's my case for why you should reassess and love the pumpkin ale.

Part 1: Cultural History and Sociology of Pumpkin Beer
From Colonial Necessity to Modern Craft Craze
Pumpkin beer isn't new, in fact it's been brewed for about 400 years. Colonial settlers brewed pumpkin out of pure necessity, using it as a cheap fermentable when grain was scarce. The result was described by contemporaries as having 'a slight twang.' It faded the moment malted grain became reliably accessible. The modern style was accidentally reinvented in 1985 when Bill Owens of Buffalo Bill's Brewery in California, who added 65 lbs of pumpkin to his mash and tasted the result. His verdict: it tasted like a vegetable (so, not great). His fix was to percolate a can of pumpkin pie spice into two quarts of what he called 'pumpkin pie juice' and dose the finished beer. Owens himself said it plainly:
“There's no way the pumpkin can add any flavour to a beer in the process.”
In 2003, Starbucks launched the Pumpkin Spice Latte and spent the following two decades running what we can view as a free flavour-education campaign for your future taproom customers, at scale, annually, globally.
The Hype Cycle: Overhyped to Maturity
The most useful framework for understanding what happened to pumpkin ale is the Gartner Hype Cycle. It maps how innovations move from initial excitement through overhype, backlash, and eventual maturity across five stages: Innovation Trigger, Peak of Inflated Expectations, Trough of Disillusionment, Slope of Enlightenment, and Plateau of Productivity.

Pumpkin spice went through all of these stages right on schedule. The Peak (roughly 2012-2015) saw every brewery on the continent jumping on the bandwagon, regardless of intent or quality: pumpkin spice deodorant, toilet spray, dog treats, and the whole absurd spread of products that followed. The Trough (2015-2018) gave us the backlash, grocery shelf surplus, and some uncomfortable financial conversations, most famously Weyerbacher's, which cited pumpkin market saturation as a contributing factor to its bankruptcy. We are now in the Plateau of Productivity: a smaller, better category where the beers that survived did so on merit. The backlash wasn't a verdict on the style, but a phase in itself.
The Neurological Reason We Love Fall Spices (TRPV3 & TRPA1 Receptors)
The reason pumpkin spice feels cozy is actually neurological, not metaphorical.
Capsaicin, the compound that makes chilli peppers burn, binds to TRPV1, your body's pain and heat receptor. Cinnamaldehyde, the primary aroma compound in cinnamon, binds to TRPV3, your thermal comfort receptor, the one that registers a warm sweater as pleasant rather than painful. Clove's eugenol activates TRPA1 at moderate doses, adding warmth without burn. When you build a pumpkin spice blend, you're activating your body's warmth-detection system at its most pleasant register. What feels like coziness is actually a specific neurological reaction triggered by spice chemistry.
Smell is the most directly wired sense to the limbic system (the region responsible for memory and emotion), which is why the same spice blend, encountered every autumn for years, accumulates into something that feels less like a product preference and more like a memory. Hitting just one of these mechanisms is good. Hitting many is when we get excellent beer.
(A quick reflection: think of the most memorable autumn food or drink experience you've had. Where did the smell fit into that memory? That's the mechanism your pumpkin ale can activate, or fail to.)
Cultural Reactance & the ‘Basic’ Backlash
The meme crystallized around 2014, when “basic” culture attached itself to a specific caricature: a woman in Uggs holding a PSL. Almost overnight, the criticism shifted from the flavour itself to the demographic drinking it.
Three sources have independently documented the same pattern (1,2,3), including a Stanford study that tested it specifically in craft beer markets. When a product becomes female-coded, it frequently gets mocked; when male-coded, it’s often elevated. Pumpkin spice in beer suffered directly from this shift. A male-dominated industry found it easy to dismiss a female-coded product, and you could say that we as an industry paid the price.
The backlash was partly driven by what psychologists call reactance — the urge to resist when something feels culturally forced. The brewer dismissing pumpkin ale as “beneath serious craft” is pulling the same trick: performing reactance dressed up as discernment. Granted, pumpkin spice deodorant and toilet spray deserved those eye rolls. But a well-made, intentionally brewed pumpkin ale is a real beverage, not a gimmick! It simply got caught in the crosshairs of a cultural trend and paid for the sins of worse products.
Why Pumpkin Ale Remains a High-Margin Seasonal
Although the backlash was loud… the behaviour of consumers was quietly pointing in the opposite direction the whole time.
For coffee, the PSL saw their cultural moment stalled during the trough (roughly 2015-2018), with pumpkin spice menu mentions dropping 30% between fall 2015 and fall 2017 according to Mintel, and foot traffic related to PSL dipped in 2018.
But then things shifted. The PSL broke sales records in 2022, resulted in the highest 6 weeks of sales for the year in 2023, and generated approximately $500 million annually as reported in 2025. U.S. foot traffic at Starbucks rose 24% on the day the 2024 PSL launched (I was there! ), and in September 2025 it delivered a record-breaking fall sales week. The Montclair State academic study appears to be proven correct – people view pumpkin spice as 'overwhelmingly positive' and that 'very few openly hate it.'
On the beer side,we didn’t see the same thing, but I would argue for different reasons. The main culprit is more likely that product overproduction into a flooded distribution channel, not that consumers had decided that they disliked the flavour (as demonstrated by Starbucks). Several breweries have kept pumpkin beer alive including Pumpking and Warlock from Southern Tier Brewing Company, Gourd Darn from Third Eye Brewing Company, and Punkin from Dogfish Head.
If the pumpkin ale is good, it moves off the shelf!
Is there a financial case for your brewery?
Yes, particularly for taproom-focused operations. Seasonal and limited releases command 20-30% price premiums over core offerings as standard, and taproom gross margins on pints run approximately 75%. A pumpkin ale selling at a seasonal premium in your own taproom (especially an Imperial or PSL-Inspired format with a higher ABV price point) is one of the highest-margin transactions you can generate in a fall window. Scarcity also drives inventory velocity: a beer with a defined seasonal window that sells through fast doesn't require markdown pricing, doesn't compete with your spring portfolio, and doesn't occupy cold storage through December.
The cautionary tale is worth naming precisely. Weyerbacher's bankruptcy has been cited as evidence that pumpkin ale is financially risky, but, as previously stated this is most likely due to overproduction into a distribution channel that was simultaneously flooded by competitors, not a failure of the style or the flavour. Their situation was a production and channel strategy problem dressed up as a flavour problem. For distribution-focused breweries, the lesson is to calibrate volume carefully and protect accounts rather than chasing peak-era production numbers. For taproom-focused breweries, the risk profile is fundamentally different.
When I was making this beer style, it was at the peak of the style's popularity. The first brewery I worked for made about 20% of its yearly revenue off of pumpkin ale alone. Since then, I have seen pumpkin ales still seasonally do well at Niagara College, but with a caveat. Bad versions linger on the shelf, while the good ones tend to fly off the shelf.
The market isn’t dead – the consumer is simply more discerning.
Part 2: What Makes a Bad Pumpkin Ale and How Do We Fix it?
The Raw Pumpkin Trap: Starch Gelatinization
Bill Owens said it himself, 'There's no way the pumpkin can add any flavour to a beer in the process.' He was right!
Raw pumpkin in the mash produces starch for fermentable sugars and, at best, a subtle body contribution. The positive volatile aromatics that give pumpkin its characteristic smell don't survive fermentation at any meaningful level. What raw or under-treated pumpkin does produce is grassy, squash-like, cooked-vegetable character from oxidised sulfurous compounds in the raw gourd that don’t flash off. The fix is roasting: Maillard reaction at 375°F for 60-90 minutes converts green character into sweet, baked notes. More importantly, it completes the starch gelatinisation that canned pumpkin often hasn't finished. Par-cooked is not gelatinised (starches being made water soluble). The label on the can doesn't tell you whether the starch is mash-ready – I have yet to see one that is.
In summary for the pumpkin gourd, it is very difficult to use it without creating some negative flavours, especially at scale. That is why I like to remind people that you don’t need to use pumpkin flesh, it can just be pumpkin spice!
The Clove Overdose: Avoiding TRPA1 Medicinal Off-Flavours
One far more common thing that makes a bad pumpkin ale is a clove overdose. Clove's primary aromatic compound, eugenol, activates TRPA1 at moderate doses and produces warmth. Above a threshold that arrives faster than most brewers expect, it tips into numbing, medicinal, and antiseptic territory. This is the clove bomb, the most common quality failure in the category by a significant margin. It is not a style problem, but actually a dosing problem. And it is completely avoidable.
(A quick reflection: think of the worst pumpkin ale you've had. Was the problem the style, or was it one of these two failures: vegetal pumpkin from under-treated adjunct, or an over-cloved blend that crossed the TRPA1 threshold into medicinal?)
Part 3: Recipe Design & Technical Execution
Selecting Your Type of Pumpkin Ale: Classive, Imperial, PSL-Inspired
Once you accept that the style is a spiced ale with a fermentable vehicle, not a pumpkin beer with some spice added, the creative decisions get clearer. The interesting work happens in the spice blend and the malt engineering. Pumpkin is the substrate; spice is the flavour. Here's the range:

Classic spiced ale: restrained spice as background warmth, modest ABV, malt-driven body, food-friendly. The spice reads as warmth in the finish rather than a foreground aroma. Highballer Pumpkin Ale, Dogfish Head Punkin, Great Lakes Pumpkin Ale.

Imperial: bigger malt base, higher ABV, more tolerance for assertive spice. Alcohol warmth becomes a fourth register alongside malt, spice, and body. Weyerbacher Imperial Pumpkin.

PSL-Inspired / Pastry: sweetness is structural, not incidental. Lactose, vanilla, high FG. Southern Tier Pumking. Southern Tier Warlock takes this base into roasted malt territory. This format is legitimate, technically demanding, and the closest thing in beer to the drink that built the entire consumer audience for this flavour profile. If someone tells you a well-made PSL-inspired pumpkin ale isn't serious beer, show them Pumking's sales history.

Malt Platform & Target Gravity Mechanics
Your FG determines your spice tolerance. A beer finishing at 1.010 and one finishing at 1.018 need fundamentally different spice rates to reach the same perceived balance point; residual sweetness buffers the sharpness of aromatic compounds. Set your target FG before you set your spice rate, not the other way around. Crystal malts or Maillard-heavy malts at 8-12% of grist give you the body you need. Keep hops utilitarian: late-hop aroma competes directly with spice aroma for the same aromatic pallet space, and it will win in ways you don't want. Personally, I like mid range malts like a Crystal 40, biscuit, victory, etc. Nothing dark as the slight acidic tone can enhance negative elements of a spice mix.
Overcoming Hydrophobic Spices: Solvents, Whirlpool Additions, and Tinctures
The aromatic compounds that make pumpkin spice smell like pumpkin spice (cinnamaldehyde, eugenol, myristicin) are hydrophobic. They're oil-soluble, not water-soluble. Cinnamaldehyde dissolves at 1.42 mg/mL in water; in ethanol, it's fully miscible. Your spices need a carrier to get into your beer, and that carrier is ethanol.
This is the same problem bakers solve when they bloom spices in fat, releasing fat-soluble aromatic compounds into a medium that can carry them. In brewing, the bridging solvent is the neutral spirit you use for a cold-side tincture (if legal in your area). A boil addition extracts aggressively but loses the most volatile aromatics to steam. A late whirlpool at 70-80°C balances extraction with volatile retention, better for heat-stable compounds like cassia cinnamon and whole clove. A cold-side tincture (spices soaked in neutral spirit for 48-72 hours, added at packaging) gives you maximum aromatic retention and maximum dosing control: whirlpool for integration, tincture for the fresh nose. If tinctures are not possible, high alcohol beers can act similarly when spices are dry-steeped; taste daily to monitor extraction.
Yeast Strain Selection: POF+ vs. Neutral Fermenter
Your yeast is contributing to the spice register before you've added anything. POF+ strains produce 4-vinyl guaiacol, a clove-like phenolic compound characteristic of Belgian witbier and hefeweizen. If your strain is POF+, that character is stacking on top of whatever clove you add. The combined eugenol load can tip the blend past the TRPA1 threshold before you've reached what seems like an aggressive spice rate. For most pumpkin ale formats, a clean POF-negative strain gives you the most control over the actual spice profile you're building. Ferment at or below 18°C to minimise esters that can compete with a cinnamon-forward profile.
Our strain recommendations?
And ferment well. Nutritional stress produces off-character (higher alcohols, acetaldehyde, sulfur) that muddies the spice palette before you've added the first gram of cinnamon. A clean fermentation is the canvas, and spice is the paint.

But a nutritionally complete fermentation isn't just good hygiene, for a spiced ale, it's the difference between tasting your spice blend and tasting your fermentation through your spice blend.
Building Your Pumpkin Spice Blend
American pumpkin pie spice runs approximately 3-4 parts cinnamon to 1 part ginger, 1 part nutmeg, 0.5 parts allspice, and 0.25-0.5 parts clove. Clove is always the lowest rate because eugenol is the most potent compound and the first to tip the blend; personally I have dropped the clove even further – can always add more.
If making tinctures, consider making individual tinctures for each spice and taste them in isolation before blending; you cannot calibrate a blend without knowing what each component contributes alone. Bench-blend in a sample of your flat, finished base beer. Then start 30-40% below your bench estimate. Spice perception in warm, flat samples does not translate linearly to cold, carbonated finished beer.
Carbonation amplifies clove intensity specifically, because CO₂ stimulates TRPA1, the same receptor eugenol activates. Evaluate cold, in the glass you'll serve the beer in, after 14 days of conditioning. Just like in IPA’s, what tastes barely there at packaging can be well-integrated at two weeks. What tastes balanced in a warm measuring cup can read as a clove bomb in a cold pint glass. Build in the evaluation step before assuming you need more.
Part 4: The 5-Step Master Checklist
5 Steps to a Commercial Pumpkin Ale Worth Defending
1. Build the malt platform first. Target FG before target spice rate; residual sweetness determines how much spice you can carry. Crystal malts at 8-12% of grist, oats or wheat if you're building toward the PSL-Inspired format. No late-hop aroma additions.
2. Roast your pumpkin (if you're going to use it). Whether you're using raw or canned: oven at 375°F for 60-90 minutes before mashing. This completes gelatinisation, removes vegetal off-character, and generates Maillard browning that contributes mild sweetness. Par-cooked is not gelatinised.
You don't need to use it. Pumpkin spice is the spice, not the gourd.
3. Know your yeast's spice register before choosing your blend. POF+ strains are already contributing phenolic warmth. Ester-forward fermentation profiles can interfere with cinnamon-dominant spice blends. Design the spice around what the yeast is doing; fill the gaps rather than doubling up.
4. Add in layers. Whirlpool at 70-80°C for heat-stable base extraction: cinnamon, whole clove, allspice. This builds background integration. Cold-side tincture (48-72 hours in neutral spirit, added at packaging) for fresh volatile aromatics: nutmeg, ginger. This builds the foreground nose. One addition alone produces a one-register beer.
5. Start low. Condition. Evaluate cold and carbonated. Dose at 30-40% below your bench estimate. Condition 7-14 days before evaluating. Evaluate cold, carbonated, in the serving glass, not warm and flat. Carbonation amplifies clove. You can always add spice. You cannot remove it.
The Bottom Line
Yes, I am biased.
But there is some serious potential for pumpkin ales in the current market. The industry has gone through the hype cycle and we are now at the plateau of productivity. A unique element of this region is that quality is rewarded!
The crash in the market was mainly due to everyone making poor versions of the product that did not live up to the hype. If you are going to make this beer, treat it just like you would any other quality beer you produce and not just a gimmick; that era is over.
Starbucks is going to make a killing selling pumpkin beer in September whether you like it or not. The pumpkin spice will flow — you just need to decide if you want to take the style seriously and brew a quality version.

3. Chill and pitch Escarpment Cali Ale at 18–20°C. Ferment to completion.
4. Transfer to secondary. Add third pumpkin addition, cinnamon, nutmeg, and cold-brewed coffee toddy. Allow 3–5 days contact. Evaluate daily.
5. Fine, keg, or bottle. Condition minimum 14 days. Evaluate spice and coffee balance cold and carbonated before release.

Note: These are starting rates. Calibrate to taste. I recommend you begin at 30–40% below these figures and adjust after a carbonated cold sensory – add tinctures to dose up. Different spice suppliers will have different intensities – dosing will vary based on supplier.

Fermentation temperature: 18–20°C.
Directions
1. Mash grain at ~65°C (144°F) for 60 minutes. If you want the beer drier, elongate mash to 75 minutes.
2. Boil 60 minutes. Add bittering hops at 60 min. Add pumpkin puree (if adding!) at 10 min. Add spices at whirlpool
3. Chill and pitch yeast at 18–20°C. Ferment to completion.
4. Complete diacetyl rest if required. Cold crash and fine.
